Christmas Eccles Cakes

  • 1lb 2oz Ready Made Puff Pastry
  • 1lb jar Mincemeat
  • Milk for brushing tops
  • Caster Sugar


  1. Pre-heat oven to 220C, 425E, Gas 7.
  2. Roll out pastry on a lightly floured board to about quarter inch thick. Using a plain 4 inch cutter, cut out 24 rounds.
  3. Put a teaspoon of mincemeat in the centre of each round and using water dampen round edges.
  4. Gather the edges into the centre and pinch in the middle to seal. Invert the cakes onto a floured surface and roll out to about 3-4 inch rounds. Make 3 slashes across each with the tip of a knife and place on baking sheets. Brush tops with milk and scatter on caster sugar. Bake for 15-20 minutes until golden. Cool on wire tray.

Can be frozen.
