Wise men's lentil soup

  • 2 tablespoons oil
  • 1 chopped onion
  • 1 chopped carrot
  • 1 chopped stick celery
  • 1 tablespoon curry powder (mild)
  • 6oz red lentils
  • 2 pints chicken/vegetable stock
  • 1oz creamed coconut
  • ΒΌ pint single cream
  • 1 tablespoon chopped parsley
  • salt and pepper


  1. Heat oil in a large pan and saute onion, carrot and celery slowly until softened but not brown
  2. Stir in curry powder and fry for a few minutes
  3. Add washed lentils and stock; bring gently to the boil, reduce heat. Cover and simmer for about 45 minutes
  4. Break in the creamed coconut and season to taste
  5. If a smooth soup is required, liquidise at this stage. Return to cleaned out pan and add cream and parsley . Bring back to heat serve with croutons.

Will freeze.

Instead of cream I use Tip-Top which is less fattening (sic).
