Theresa's Marmalade

Ingredients

  • 4lbs Seville Oranges
  • 8pts water
  • 2-3 lemons
  • 8lbs sugar

Method

  1. Wash fruit
  2. Remove juice and seeds from oranges and lemons.
  3. Cut skins up in processor and add to jam pan with the water and juice.
  4. Put pips in a piece of muslin and tie up. Add to pan.
  5. Cook until peel is soft, which will be around 1 hour and then add sugar.
  6. Bring to fast rolling boil and cook until set (around another 20 minutes)
  7. Cool and bottle.
