- 4lbs Seville Oranges
- 8pts water
- 2-3 lemons
- 8lbs sugar
- Wash fruit
- Remove juice and seeds from oranges and lemons.
- Cut skins up in processor and add to jam pan with the water and juice.
- Put pips in a piece of muslin and tie up. Add to pan.
- Cook until peel is soft, which will be around 1 hour and then add sugar.
- Bring to fast rolling boil and cook until set (around another 20 minutes)
- Cool and bottle.
