Theresa's Cherry and Almond Cake

    1 and a quarter hours
    8" tin


    • 8oz Self Raising Flour
    • 6oz Caster Sugar
    • Vanilla Essence
    • 6oz Butter
    • 8oz Cherries
    • 2oz Ground Almonds
    • 8oz Marzipan
    • 3 Eggs
    • Salt


    1. Beat together butter and sugar until pale and creamy.
    2. Add sifted flour and egg alternately.
    3. Add ground almonds and essence.
    4. Line and grease 8" tin. Put half the mixture in and smooth.
    5. Roll out marzipan and place on cake. Put rest of mixture on top and bake for 1 and a quarter hours at 150C-165C until golden.
