Rhubarb and orange crumble

Ingredients

Filling

  • 1lbs early rhubarb
  • 1tbsp golden syrup
  • juice of 1 large orange
  • 3oz demerara sugar

Crumble

  • 4oz self raising flour
  • Rind of orange
  • 2oz Butter
  • 1oz demerara sugar

Method

  1. Cut rhubarb into small pieces and place into greased dish
  2. Heat syrup, juice and sugar until well blended and pour over rhubarb
  3. Sieve flour, melt in butter, stir in sugar and rind and sprinkle on top of rhubarb
  4. Level top and bake at 400F/Gas 6 for about 35 minutes
  5. Decorate with orange slices and serve with cream
