Pear and Cranberry Jalousie

Ingredients

  • 4 ripe Pears, peeled cored and diced
  • 3oz Dried Cranberries
  • ½tsp Ground Spice
  • 3oz Dark Brown Sugar
  • juice of half a Lemon
  • 10oz Puff Pastry
  • 1 Egg, beaten
  • 1tsp Caster Sugar to decorate

Method

  1. Pre-heat oven to 200C/400F gas 6. Mix the diced pear, dried cranberries, ground spice, sugar and lemon juice.
  2. Roll out the puff pastry to a large rectangle and spoon the fruit mixture down the centre of the pastry. Make a series of cuts in towards the fruit and plait the pastry over the top of the fruit.
  3. Place the jalousie on a baking sheet, brush with egg and sprinkle with the caster sugar. Bake in the centre of the oven for 25 minutes or until the pastry has puffed and turned a golden brown. Serve warm with cream.
