Peachy Beef Casserole

  • 1lb Lean Casserole Steak, Cubed
  • 15oz Can Peach Slices
  • ΒΌ pint Beef Stock
  • 1oz Flour / 2 Level teaspoons Paprika, Mixed
  • 2oz Butter
  • 8oz Can Tomatoes
  • 2 to 3 sticks of Celery
  • 4oz Sliced Mushrooms
  • Salt and Pepper
  • Tabasco Sauce
  • 2 Tablespoons of Sherry (optional)


  1. Toss cubed steak in seasoned flour (paprika, salt and pepper) and cook to seal.
  2. Turn down heat and slowly add syrup from peaches and stock. Cook to thicken.
  3. Add tomatoes, celery, tabasco and turn into casserole.
  4. Cook at Gas mark 3, 160C, 325F for about 1 and a half hours, adding peaches, mushrooms and sherry 15 minutes before end of cooking time. Taste for seasoning.

Serve with jacket potato and a green vegetable (sprouts, broccoli, spring cabbage). Will freeze.
