Peach and Ham Salads

Serves
4-6 people

Ingredients

  • 4-6 slices cooked Cumberland Ham (1 per person)
  • 4-6 Peach halves (fresh or tinned)
  • 1 tsp Curry Powder
  • 2 tbsp Port Wine
  • 1 tbsp Apricot Jam
  • ¼ pt Double Cream
  • Lettuce
  • Watercress

Method

  1. Put curry powder, port and jam in small pan and heat until jam has melted. Strain and cool.
  2. Whip cream until thick and then stir in cooled curry mixture.
  3. Place lettuce leaves on plate and then ham. Arrange drained peaches cut-side down on top of ham.
  4. Coat peaches with sauce and chill.

Serve with brown bread and butter.
