Mocha Rum Cups

Ingredients

  • 6oz good make plain Chocolate
  • ½oz Butter
  • 3 large Eggs, separated
  • 1 tbsp Rum
  • 1 tbsp Coffee Essence
  • ¼ pt Double Cream, whipped
  • Chocolate to decorate

Method

  1. Break chocolate into basin with butter and melt over hot water.
  2. Remove from heat and beat in egg yolks.
  3. Add rum and then coffee essence.
  4. Whisk whites until stiff and then fold into mixture. Pour into small pots and leave to set.
  5. Put a swirl fo cream into each put and decorate with chocolate.
