Mincemeat, Apple and Almond Pudding

Ingredients

Filling

  • 12oz prepared cooking apple
  • 3oz soft brown sugar
  • 1 tbsp water
  • 8oz mincemeat

Topping

  • 4oz soft margarine
  • 4oz ground almonds
  • 2 well beaten eggs
  • 4oz soft brown sugar
  • ½oz flaked almonds

Method

  1. Slice apples and put in pan with the water and sugar and cook until soft, or cook 5 minutes on high in the microwave.
  2. Add mincemeat to apple and turn into ovenproof dish
  3. Beat together margarine, sugar, ground almonds and eggs until a smooth mixture is formed. Spread over apple mixture and sprinkle on the flaked almonds.
  4. Bake in pre-headed oven Gas 4, 350E, 180C until firm to the touch and pale golden (about 35-40 minutes)
  5. Serve with warm cream

Will freeze - nice warmed up.
