Midsummer Fruit Salad

  • Rind and juice of Lemon
  • ¼pt cold Water
  • ¼pt sweet White Wine
  • 3oz Caster Sugar
  • 1 Galia Melon, cubed
  • 2 Kiwi Fruit
  • 1 Paw Paw or Mango
  • 8oz Strawberries, halved
  • 4oz Black Grapes, seeded and halved


  1. Put water, sugar, rind and juice of lemon into a small pan and heat until sugar dissolves. Add wine and cool.
  2. Cut melon into cubes or balls and place in a large glass dish.
  3. Slice kiwis and add, with halved strawberries and grapes.
  4. Remove peel and seeds from paw paw and dice flesh. Add to pan.
  5. Pour cold syrup over fruit and leave to chill.

Serve with single cream.
