Mediterranean Salad

Ingredients

  • 12oz can Sweetcorn
  • 7.5oz can Tuna fish
  • Rind and juice of Lemon
  • ¼ pt Mayonnaise
  • ½ Cucumber
  • 1 large ripe Avocado Pear, peeled and halved
  • Shredded Lettuce
  • Salt & Pepper

Method

  1. Shred lettuce and place in dish.
  2. Drain tuna and mash with mayonnaise, lemon rind, juice and seasoning. Thin down if necessary with juice from tuna.
  3. Peel and grate cucumber and add to corn. Chop avocado and add. Place on top of lettuce and stir in dressing.
