Ingredients
Shortbread
- 12oz Sifted Plain Flour
- 8oz Butter
- 4oz Caster Sugar
Filling
- 8oz Stoned and chopped dates
- Juice of a lemon
- 1oz Caster Sugar
Method
- Rub fat and flour together to make crumbs. Add sugar.
- Work together until it becomes a dough. Divide in half.
- Use half to line a medium signed tray bake tin.
- Mix together dates, juice and sugar & heat until dates soften. Cool.
- Spread cooled date mixture over shortbread.
- Roll out other half of shortbread to fit tin and place on top. Plress down and prick all over.
- Cook for 20 minutes at 180C, Gas 4 for 20 minutes.
