Honey-Glazed Chops with Apricot Sauce

Ingredients

  • 2oz "no need to soak" Apricots
  • 2oz Raisins
  • ¼pt Cider or Cider vinegar
  • ¼pt Apple Juice
  • 1-2 tbsp Brown Sugar
  • 1 tspn Worcestershire Sauce
  • 4 Pork Chops
  • 1oz Butter
  • 1 tbsp Clear Honey
  • 1 level tspn French made Mustard

Method

  1. Put the apricots, raisins, cider or vinegar, apple juice, brown sugar and Worcestershire sauce together in a small pan. Bring to boil, then turn down heat and simmer for about 20 minutes.
  2. Trim chops if necessary. Place in heatproof dish or on foil-lined grill.
  3. Melt butter and stir in honey and mustard. Brush over the chops. Cover with foil and cook for 30 minutes at 190C.
  4. Grill gently for about 10 minutes each side, depending on thickness of chop. Brush with a little glaze during grilling.
  5. Place chops in a dish. Pour sauce over the top and grill gently to reheat if necessary.

Serve with pasta.
