Harvest Slice

Favourite Autumn fruits on a pastry base with a crincy topping. You will need a 7x11 inch / 18x28 cm Swiss roll tin.

Ingredients

  • 12oz Rich flan or shortbread pastry
  • Some rhubarb (???)
  • 8oz Damsons
  • 2 tbsp Sugar
  • ½ tsp Cinnamon
  • 4oz unsalted Butter, chopped
  • 6oz Plain Flour
  • 4 tbsp Soft Brown Sugar
  • 4 tbsp Sesame Seeds

Method

  1. Preheat oven to 190C, 375F , Gas5. Roll out pastry on a lightly floured surface and line swiss roll tin or other rectangular tin. Even top edges of the pastry and prick base.
  2. In a saucepan, mx the rhubarb, demsons, sugar and cinnamon with 1 tbsp water. Cook for 5 minutes, or until fruit is soft, but still holds its shape. Cool the fruit and set aside.
  3. Using a slotted spoon, put mixture on top of pastry base. In a bowl, rub together butter and flour until mixture resembles fine breadcrumbs. Add brown sugar and sesame seeds.
  4. Sprinkle over fruit and bake for 35-40 minutes. Serve hot or cold, sprinkled with more sugar.

It tastes good hot or cold with a dollop of cream.
