Grapefruit and Grape Cocktail

Ingredients

  • 3 large grapefruits
  • 8oz mixed green and black grapes
  • 1oz caster sugar
  • 3 tbsp salad oil
  • 1 tbsp white wine vinegar
  • ½ tsp french mustard
  • Lettuce

Method

  1. Peel and separate grapefruit, cutting between membrane.
  2. Halve and de-pip the grapes and combine with grapefruit.
  3. Sprinkle on caster sugar and chill.
  4. Mix together oil, vinegar, and mustard and beat. Pour over the fruit and stir.
  5. Make a bed of lettuce and place fruit on top.

To freeze: Pack fruit with dressing into rigid containers, cover and seal.

To serve: Thaw for a least 5 hours and serve as above.
