Ginger Spiced Pork

Ingredients

  • 1 ½ lb of Pork fillet, cubed
  • 1oz Flour
  • 1 ½ teaspoons Salt
  • Ground Black Pepper
  • 1 level teaspoon Ginger
  • 1 oz Butter
  • ¼ Teaspoon Tabasco Sauce
  • 14 oz can of Tomatoes
  • 4oz Button Mushrooms, sliced
  • 1 tablespoon Worcester Sauce
  • 2 level tablespoon of Soft Brown Sugar
  • 2 tablespoons Vinegar
  • 2 cloves of Garlic, crushed
  • 1 Bay Leaf

Method

  1. Mix flour, seasoning and ginger, and use to coat the pork.
  2. Heat butter in large pan and quickly saute pork. Transfer to a 2 1/2 pint oven-proof dish.
  3. Combine all ingredients for sauce and pour over meat.
  4. Cover, and cook at Gas4 / 325F / 160C for 1 1/2 hours until meat is tender.
  5. Check for seasoning and remove bay leaf.
