Fresh Raspberry Slices

  • 8oz shortcrust pastry
  • 3 tbsp raspberry jam
  • 5oz fresh raspberries
  • 3oz soft butter
  • 3oz caster sugar
  • 3oz ground almonds
  • 3oz ground rice
  • 1 tsp baking powder
  • 2 medium eggs
  • 2 tbsp toasted flaked almonds


  1. Preheat the oven to 190°c, 375°F, gas 5.
  2. Grease a 7" square tin and line with pastry.
  3. Spread jam over base and top with raspberries.
  4. Beat together the butter and sugar until soft and creamy. Add the beaten eggs and then the ground almonds, ground rice, and baking powder.
  5. Beat well and then spread the mixture over the raspberries. Sprinkle the almonds over the top.
  6. Bake for 20-25 minutes until pale golden. Cool and cut into slices.
