Date and Walnut Loaf

Makes 2 x 1lb loafs

Ingredients

  • 6oz Wholemeal Flour
  • 1 teaspoon Bicarbonate of Soda
  • 10oz Self Raising Flour
  • 13floz Boiling Water
  • 1lb Chopped Dates
  • 2oz Chopped Walnuts
  • Pinch of Salt
  • 2oz Margarine
  • 6oz Caster Sugar

Method

  1. Scald dates, marg and sugar in boiling water
  2. Mix dry ingredients together in bowl with walnuts
  3. Add date mixture and mix well
  4. Pour into lined and greased loaf tins. Bake until firm and golden (around 1 hour at 300F/150C/gas 3).

Cool in tin and then turn out. Improves if left 3-4 days in airight tin. Freezes well.
