Cumberland Sausage with Spicy Sauce

Ingredients

  • 1-1 ½ lbs thick Cumberland sausage, in one piece
  • 1oz butter
  • 1 clove garlic
  • 1 finely chopped onion
  • 2 tablespoons wine vinegar
  • ¼ pint light stock
  • 1 tablespoon Cumberland mustard with peppercorns
  • 2 tablespoons demerara sugar
  • 1 slice lemon
  • 1 bay leaf
  • Salt
  • Pinch of cayenne pepper
  • 2 tablespoons Worcestershire sauce
  • 6 tablespoons tomato sauce
  • 2 tablespoons tomato puree

Method

  1. Grill or cook in oven the sausages, circled round into a baking dish. Drain off any fat and keep warm in oven.
  2. Melt butter and cook onion and garlic until soft.
  3. Add vinegar, stock, mustard, lemon slice, sugar, bay leaf, and cayenne pepper. Bring slowly to boil, lower heat, and simmer for 15 minutes.
  4. Add tomato sauce, puree, Worcestershire sauce, and seasoning. Simmer a further 10 minutes. Remove lemon slice and bay leaf. Serve with sausage.
