Crunchy Salad

Ingredients

  • 4oz red Cabbage, shredded
  • 4oz Carrots, coarsely grated
  • 4oz thinly sliced Courgettes
  • 4oz Bean Sprouts
  • 4oz Roasted Peanuts
  • 4 tbsp Lemon Juice
  • 4tbsp Walnut or Olive Oil
  • ½ tsp French Mustard
  • Salt and Pepper

Method

  1. Mix all vegetables in a large bowl.
  2. Shake together lemon juice, oil, mustard and salt & pepper to taste.
  3. Pour over vegetables and mix well.
  4. Add nuts before serving and fork in.
