Crumpets

Editors note: the recipe does not explicitly mention this, but you will need "Crumpet Rings" to make this.

Ingredients

  • 8oz Strong Plain Flour
  • 1tsp Salt
  • 1 tbsp Dried Yeast
  • 1 tsp Caster Sugar
  • ½ pt Milk
  • 2 floz Water
  • Lard to grease

Method

  1. Heat milk and water together in small pan until hand-hot.
  2. Pour into a jug, stir in sugar and dried yeast and leave in a warm place for 10-15 minutes until it has a good frothy head.
  3. Sift flour and salt into a mixing bowl, make a well in the centre and pour in the frothy mixture. Use a wooden spoon to add the flour gradually into the liquid.
  4. Beat well at the end to a perfectly smooth batter. Cover with a tea towel and leave in a warm place for around 45 minutes.
  5. Grease pan and rings well and place over a medium heat until pan is hot. Spoon one tablespoon of batter into each ring.
  6. Let them cook for 5-6 minutes. Tiny bubbles will appear and suddenly burst. Lift off the rings with spoon and fork turn crumpets over to cook other side for 1 minute. Keep between tea towel to cool.
