Citrus Cheesecake

30 minutes + chilling



  • 1 Orange
  • 1 Lemon
  • 1 Grapefruit
  • 7 ½ oz can Mandarin Oranges
  • ½ oz Gelatine
  • 1-2 oz Sugar
  • 12 oz Cream Cheese


  • 2oz Butter
  • 1oz Caster Sugar
  • 4oz Digestive Biscuits
  • Double Cream to decorate


  1. Make base.
  2. Squeeze juice from fruits and make up to half a pint with tinned orange juice.
  3. Dissolve gelatine in 3 tablespoons of reserved liquid and heat, cool and add to juices.
  4. Beat cream cheese and add sugar.
  5. Mix in cooled mixture and leave to thicken a while.
  6. Chop oranges, reserving some for decoration.
  7. Add oranges to mixture and then fold in whipped cream.
  8. Pour on top of base and leave to set.
  9. Decorate with cream and reserved oranges.

Editors Note: You will probably notice that this recipe has some oddities within the text (e.g. giving you the choice of 1-2oz sugar, no real instructions about how to make the base...) - we can only assume that this is a recipe that Sheila was pretty familiar with and that the handwritten page she filed here was more for her own records than for public consumption.
