Cheering Easter Tarts

Ingredients

Pastry

  • 6oz Plain Flour
  • 3oz Butter
  • ½ an Egg to bind

Filling

  • 2oz Butter
  • 2oz Caster Sugar
  • 1 ½oz Eggs, beaten
  • 2oz Ground Almonds
  • 6oz Cream Cheese
  • Juice and Rind of half a lemon
  • 2oz Chopped Cherries
  • 2oz Sultanas
  • 2 tbsp Lemon Curd

Method

  1. Make pastry up and chill for about 30 minutes. Roll out thinly and use to line tart tins. Reserve trimmings.
  2. Cream together butter and sugar until pale and creamy. Beat in egg and cream cheese alternately, then add ground almonds.
  3. Add rind and juice of lemon then sultanas and lastly the chopped cherries. Mix well and use to fill tart tins. Roll out reserved pastry trimmings, cut into thin strips and use to make crosses on tarts.
  4. Bake in a pre-heated oven for 15-20 minutes until filling has set.
  5. Melt lemon curd and brush over hot tarts. Leave to cool and then put into tins to store.

These tarts can be frozen at the end of step 3.
