Cardinal Salad

Ingredients

  • 6oz shredded Red Cabbage
  • 2oz seedless Raisins
  • 4oz diced cooked Beetroot
  • Large Orange
  • 2 tbsp Vinegar
  • 1-2 tbsp Oil
  • 2 level tsp Caster Sugar

Method

  1. Put oil, vinegar, sugar and orange rind in screw-topped jar and shake.
  2. Place shredded cabbage, raisins, diced beetroot and segments of orange in bowl and toss in dressing.

Nice to serve with ham and pork.
