Banana Loaf

  • 2oz soft margarine
  • 4oz caster sugar
  • 5oz self-raising flour
  • ¼ tsp salt
  • ¼ tsp bicarbonate of soda
  • ½ tsp vanilla essence
  • 1 beaten egg
  • 1 large, ripe banana, mashed


  1. Beat margarine and sugar together until soft and creamy.
  2. Beat in the mashed banana.
  3. Add beaten egg and vanilla essence.
  4. Mix together flour, salt, and bicarb, and fold into mixture.
  5. Turn into a greased and lined 1lb loaf tin and bake for 1 hour at Gas 4, Elec 350°, 180°c until firm and golden.

Can be served plain or buttered.

Can be frozen.
