Apple & Nut Tea Bread

A delicious loaf with apple, walnuts and raisins - perfect with an afternoon cuppa!

Ingredients

  • 8oz Wholewheat Flour
  • 2 Teaspoons Baking Powder
  • ½ Teaspoon Cinnamon
  • 2oz Finely Chopped Walnuts
  • 3oz Butter or Margarine
  • 5oz Soft Brown Sugar
  • 2 Beaten Eggs
  • 2 Tablespoons Milk
  • 2oz Seedless Raisins
  • 1 good-sized Cooking Apple
  • 4oz Icing Sugar
  • A Little Warm Water
  • A Few Walnuts to Decorate

Method

  1. Sieve together flour, baking powder and spices and add walnuts (add bran from sieve).
  2. Cream butter and sugar til light and fluffy.
  3. Beat eggs and milk together
  4. Add dry ingredients to the creamed mixture, alternating with egg.
  5. Stir in raisins.
  6. Peel, core and finely dice apple and stir into cake mixture.
  7. Put in a greased 2lb loaf tin lined with greaseproof paper. Smooth top.
  8. Bake for 1 hour at Gas4 / 350 elec / 180c until firm to the touch.
  9. Cool on a wire tray and ice with icing sugar mixed with warm water. Decorate with one or two walnuts.

Will freeze. Serve buttered.
