American Hot Chicken Salad

This recipe was supposed to have been one of Mrs Nixon's favourites in the 'white house'.

Ingredients

  • 4 Cups cooked Chicken, chopped
  • 2 Tablespoons Lemon Juice
  • ¾ Cup Mayonnaise
  • ½ Cup Chopped Celery
  • 1 Teaspoon Salt
  • 4 Hard Boiled Eggs, Chopped
  • ¾ Cup Condensed Chicken Soup (Campbells)
  • 1 Teaspoon Chopped Onion
  • 2 Tins Chopped Tomatoes
  • 1 Cup grated Cheese
  • ⅔ Cop of roasted Almonds
  • ½ Cup crushed potato crisps

Method

  1. Mix together all ingredients except cheese, almonds and crisps.
  2. Place the mixture in a large (lasagne type) baking dish. Stand in the fridge overnight.
  3. Mix together cheese, crisps and almonds and cook for 20 minutes at 375F, 190C, Gas Mark 5 until browned
